PID 120°C is not one brew temperature in these HX manuals

What this article adds

Shows that two heat-exchanger manufacturer manuals examined here attach different brew/outlet figures to the same PID-displayed boiler temperature of 120°C — Makina about 91°C outlet at about 1.2 bar; Rocket Giotto/Mozzafiato 93.6°C Scace brew water — so the displayed boiler number is not a universal brew temperature across those documents.

On a heat-exchanger espresso machine the PID often displays a boiler temperature near 120°C while the water that meets the coffee is expected to sit somewhere in the low nineties. Field writing treats that offset as familiar. What it rarely does is check whether manufacturers who publish both numbers agree on the brew-side figure for the same boiler reading.

They do not, in the two manuals examined here. At a PID-displayed boiler temperature of 120°C, Makina’s S7 Pro PID user manual recommends about 91°C at the outlet and about 1.2 bar on the boiler gauge. Rocket Espresso’s instruction manual, for Giotto and Mozzafiato PID machines, lists 93.6°C brew water measured with a Scace device for the same 120°C boiler display. The finding is that reconciliation: one displayed boiler figure, two published brew/outlet attachments, and no basis in these documents for treating 120°C as a single brew temperature.

What Makina publishes for 120°C

Makina’s S7 Pro PID user manual describes a heat-exchanger machine with a PID that programs “the boiler temperature inside the boiler” in order to modify “the extraction temperature of the coffee from the brew group.” Under §7.4 it states the recommendation in one sentence:

We recommend a temperature setting on the PID of 120°C at about 1.2 bar, which corresponds to an outlet temperature of about 91°C.

That is three kinds of claim in one line: a PID boiler setpoint, an approximate boiler-gauge pressure, and an approximate outlet temperature. The manual does not name a Scace device, does not give a flush or idle protocol for the outlet figure, and does not present a multi-row conversion table. Elsewhere it treats “about 1.01.3 bar or a temperature of 120°C” as the ready-to-use boiler condition. The 91°C figure is therefore Makina’s published outlet attachment for that recommended setting, not a measurement reproduced in this article.

What Rocket publishes for 120°C

Rocket’s English instruction manual (dealer-hosted 2019 PDF mirrored for this article) has a separate programming section for Giotto or Mozzafiato PID machines. It states that Rocket “measure[s] the *exact boiler temperature and display[s] that reading on the controller,” and prints a table of PID-displayed boiler temperature against “BREW WATER TEMPERATURE MEASURED USING SCAE.” The Celsius rows include:

The facing page’s prose calls the same instrument a “SCACE meter” and says the table indicates “‘real’ group temperature” by that measurement. The table header’s “SCAE” spelling is retained here as printed; the prose’s “SCACE” is the usual thermofilter name. Rocket does not, in the pages examined here, state flush timing, idle time, or ambient conditions for those Scace values. What the document does establish is a manufacturer-published brew-water figure of 93.6°C for a 120°C PID boiler display on those HX models.

The displayed boiler temperature matches. The brew-side attachments do not. The gap is about two and a half degrees Celsius between Makina’s “about 91°C” and Rocket’s 93.6°C. That is enough to matter if someone treats either figure as the field’s single conversion for “PID 120,” and it is not adjudicated by these manuals: neither cites the other, and neither explains the other’s number.

Two further separations between kinds of claim keep the comparison from being over-read.

Outlet wording versus Scace wording. Makina says “outlet temperature.” Rocket’s table says brew water measured with a Scace device and its prose says group temperature by Scace. Those are related measurement ideas, and they are not proven identical protocols by the text examined here.

HX steam-boiler PID versus dual-boiler brew-boiler PID. The same Rocket PDF also contains an R58 / R60V table in which displayed boiler temperatures run 103109°C against brew-group temperatures in the low–mid nineties. That is a different machine architecture and a different display band. It is useful only as a reminder that “boiler temperature on the PID” is not one measurand across Rocket’s own manual, let alone across brands. The 120°C comparison above is confined to the HX sections.

What this does and does not settle

Does. In the Makina S7 Pro PID manual and the Rocket Giotto/Mozzafiato PID pages examined here, a PID-displayed boiler temperature of 120°C is paired with different published brew/outlet figures — about 91°C versus 93.6°C. Makina also ties its recommendation to about 1.2 bar on the boiler gauge. A reader who collapses “set 120” into one brew temperature is doing something neither of these documents authorises across machines.

Does not. Which outlet figure is “correct” for a given machine; whether Geisinger-style field charts that map 120°C boiler to about 93°C brew are secretly quoting Rocket; what a Scace would read on a Makina S7 under Rocket’s undisclosed table conditions; or that every HX PID uses 120°C. Free explainers already say boiler display and brew temperature differ. The unserved point here is the manufacturer-to-manufacturer disagreement at one shared display value in the primary sources examined here.

No recipe, flush routine, or purchase ranking follows. The documents disagree on the brew-side attachment; they do not tell a reader which coffee to pull at which cup temperature. For steam-boiler temperature–pressure pairs that also disagree across manufacturers, see that reconciliation.
