Mazzer ZM’s espresso µm range moves with the burr SKU
What this article adds
Shows that Mazzer’s ZM product documents attach micron grind settings to burr distance, while the manufacturer’s indicative grind-settings chart publishes espresso Recommended Range [μm] as 190–280 on K151B and 260–350 on K151I — and does not name a particle-size statistic on that chart — so the espresso µm figure examined here is not one band across burr SKUs.

A micron number on a commercial espresso grinder is incomplete until the kind of claim is named: burr distance, particle-size summary, or something else. Mazzer’s ZM materials make that naming necessary. The product copy attaches microns to the distance between the burrs. The manufacturer’s indicative grind-settings chart then prints brew-method Recommended Range [μm] values that change with the fitted K151 burr SKU. For espresso, the chart examined here does not give one band.
This article is not a dial-in guide and not a ranking of burrs. It is a reconciliation of what the Mazzer documents examined here attach the microns to, scoped to espresso rows on that chart.
Product documents: microns as burr distance
The Mazzer ZM product page examined here states that the motor-operated digital grind adjustment system allows the barista “to control the distance between the burrs in microns so that the grind setting is understandable, accurate and repeatable.” The same page’s DIGITAL CONTROL block repeats that the adjustment “controls the distance between the burrs in microns.” A later features block uses a third wording: “adjust the distance between the grinders in microns.” Those sentences treat the displayed micron figure as a gap / distance setting, not as a named particle-size mean.
The ZM Plus brochure (footer code DPZMPL092022) matches the burr-distance kind of claim: “The digital grind adjustment system allows the barista to control the distance between the burrs in microns through a stepper motor, so the grind setting is understandable, accurate and repeatable.”
On the same product page, Mazzer separately claims that “Excellent burr parallelism gives consistent particle size distribution.” That is a parallelism → PSD-consistency claim. It does not convert the numeric grind-setting microns into a published d[3,2], d[4,3], X50, or other particle-size statistic, and it does not reprint the chart’s espresso bands beside that sentence.
TRUE ZERO / True Zero calibration language on the brochure and product page is about making “grind settings … identical from grinder to grinder.” It corroborates that the setting is treated as a transferable grind position. It does not, by itself, identify that position as a particle diameter.
The indicative chart: espresso µm moves with burr SKU
Mazzer’s ZM / ZM Plus tutorial page links “ZM indicative grind settings” as a download. The one-page PDF examined here is titled Indicative ranges of grind setting for the most popular brewing methods. Its table columns are Brewing Method, Burrs, and Recommended Range [μm].
The espresso-relevant rows on that chart examined here are:

So “espresso” is not one manufacturer µm band on this carrier. With espresso burrs K151B, the recommended range is 190–280 μm. With hybrid burrs K151I, the recommended range is 260–350 μm. Those intervals overlap only in the middle; neither contains the other. Decaf espresso is a fourth printed attachment: 175–250 μm on K151B and ~250 μm on K151I.
The chart header says grind setting and Recommended Range [μm]. On the PDF examined here it does not say “particle size,” does not name a PSD statistic, and does not restate “distance between the burrs.” Read against the product documents, the coherent kind of claim for these numbers is the same digital burr-distance grind setting the product pages advertise — now tabulated by brewing method and burr SKU. Treating 190–280 μm as the espresso particle-size target, or as a band that applies regardless of which ZM burr is fitted, is not what the chart examined here prints.
What this rules out, within these documents
Within the product page examined here, ZM Plus brochure, tutorial link, and indicative chart:
- Micron grind settings are attached to burr distance on the product carriers.
- The indicative chart’s espresso Recommended Range [μm] is 190–280 on K151B and 260–350 on K151I; that is not one espresso band.
- The chart does not, in the text examined here, name a particle-size statistic for those ranges.
- Parallelism language about “consistent particle size distribution” is a separate kind of claim from the numeric setting bands.
Those are scoped negatives about the Mazzer carriers examined here. They are not a claim that no particle-size measurement of ZM grounds exists elsewhere, and they are not a recipe for either burr set. A µm figure quoted from the ZM indicative chart remains a grind-setting range for a named burr SKU until a document says otherwise — and when espresso has two printed ranges, the method name alone does not pick which one is being quoted.
Limits
- Product-page HTML was retrieved with HTTP status 500 while still returning a full
ZM - Mazzerdocument body; load-bearing sentences were verified in that body. Later silent revisions are outside the scope of this article. - Brochure identity is the ZM Plus PDF examined here carrying
DPZMPL092022; it is used for the burr-distance wording, not as a second copy of the indicative table. - The indicative PDF lists other brewing methods besides espresso; those rows are outside the scope of this article and are not used here as brew recipes.
- Distinct from this site’s Mahlkönig reconciliations: those concern a particle-versus-gap collision on one education page, or dual indicating claims on an E65S GbW brochure. The Mazzer finding here is burr-SKU dependence of the espresso µm grind-setting band on the manufacturer’s own indicative chart.
